Paprika-Roasted Potatoes and Pumpkin

 

 

1 kg (2 1/4 lb) potatoes, peeled and chopped

8 tsp water

1 kg (2 1/4 lb) pumpkin, chopped

8 tsp olive oil

2 tsp paprika

2 cloves garlic, chopped

8 tsp sultanas

8 tsp pine nuts

 

 

1. Preheat oven to 180 C (356 F).

 

2. Place potatoes and water in a microwave-safe container and

cook for 10 minutes on high power (100%) until tender. Drain.

 

3. Combine cooked potatoes and chopped pumpkin in a large

roasting pan.

 

4. Combine oil, paprika, and garlic. Toss through vegetables.

 

5. Roast for 40 minutes.

 

6. Stir in sultanas and pine nuts and roast for a further 20 minutes

until golden and crisp.
