My youngest son used to call eggs pre-born chickens. My saying as to why I would eat eggs and not any meats, was because the chicken did not have a mom AND a dad (just a mom). I started using this saying because so many people would assume that when I said I was vegetarian and didn't eat meat, their response was usually this: " But you eat chicken and fish, right? " Followed shortly thereafter by, " Well, if not chicken and fish, then you DO eat seafood, right? " I don't want to eat the eggs (chicken) once it HAS had a life!!! I have heard other vegetarians say they wouldn't eat anything that had a " face " . I know this is a vegan list, so eggs are definitely out. But I struggle to give up eggs. We don't sit down at the table to plates of them for breakfast, but I will use them in a recipe if it calls for that. I am sure it's healthier to avoid eggs, but I have not read anything to this extent. I hear " The China Study " talks more about the subject, but have yet to put my hands on that book. Are there any articles on-line I could read? Anyone? Also, if a recipe calls for eggs, are there any substitutions I can use? I looked at one " egg replacer " I found, and it listed soy in the ingredients. I cannot use soy because of potential damage to my thyroid. Thanks! Lisa Wife to Chuck (12 yrs.) Guest guest Posted February 1, 2007 Report Share Posted February 1, 2007 Lisa For baking I mostly use a flaxseed gel, agar agar and/or puree veggies like sweet potato, squash or pumpkin. For the most part binder is what's being replaced in recipes calling for eggs so that almost always works. In some cases, the egg also provides leavening, so I add a little extra soda or powder, or I use sparkling water. I can't use soy either and just recently confirmed that when I found a vegetarian glucosamine which also contained soy and avocado. Guest guest Posted February 1, 2007 Report Share Posted February 1, 2007 i choose not to eat eggs because of all the male chicks killed because they won't grow up to be egg-layers. also, the vast majority of laying hens are treated very very poorly. (yes, i could choose to eat eggs from genuinely free range hens, but i feel it's more important to show that eggs aren't necessary.) finally, there's nothing in an egg that we need nutritionally and very few things you can't make without them - meringue isn't possible as far as i know, but baking is easy without them once you get accustomed to the replacements (fantastic info on this at www.theppk.com). best wishes alice ps what do you mean about the stem cells?
