Eggs?

Personally I have an allergy to them, but even if I didn't, I don't like to

eat anything before it's had a chance to have a life.

My youngest son used to call eggs pre-born chickens.

Brenda, you are too funny. My saying as to why I would eat eggs and not any

meats, was because the chicken did not have a mom AND a dad (just a mom). I

started using this saying because so many people would assume that when I said I

was vegetarian and didn't eat meat, their response was usually this: " But you

eat chicken and fish, right? " Followed shortly thereafter by, " Well, if not

chicken and fish, then you DO eat seafood, right? " I don't want to eat the eggs

(chicken) once it HAS had a life!!!

I have heard other vegetarians say they wouldn't eat anything that had a " face " .

I know this is a vegan list, so eggs are definitely out. But I struggle to give

up eggs. We don't sit down at the table to plates of them for breakfast, but I

will use them in a recipe if it calls for that. I am sure it's healthier to

avoid eggs, but I have not read anything to this extent. I hear " The China

Study " talks more about the subject, but have yet to put my hands on that book.

Are there any articles on-line I could read? Anyone?

Also, if a recipe calls for eggs, are there any substitutions I can use? I

looked at one " egg replacer " I found, and it listed soy in the ingredients. I

cannot use soy because of potential damage to my thyroid.

Thanks!

I reached a point where I had problems digesting them. Reading the

following showed me I wasn't missing anything and was better off

without them --

PS Aren't pretty much all eggs being sold nonfertilized? Such aren't

going to become chickens no matter what the conditions. That's why I

found all these people arguing whether eggs are vegetarian or not when

I googled this ...

Commercial eggs are unfertilized -- they don't have a " chance " at a

life. No stem cells to worry about, either.

For baking I mostly use a flaxseed gel, agar agar and/or puree veggies like

sweet potato, squash or pumpkin. For the most part binder is what's being

replaced in recipes calling for eggs so that almost always works. In some

cases, the egg also provides leavening, so I add a little extra soda or

powder, or I use sparkling water.

I can't use soy either and just recently confirmed that when I found a

vegetarian glucosamine which also contained soy and avocado. Sadly the

improvement was almost instantaneous but the soy was a killer. Sigh

i choose not to eat eggs because of all the male chicks killed because

they won't grow up to be egg-layers. also, the vast majority of laying

hens are treated very very poorly. (yes, i could choose to eat eggs

from genuinely free range hens, but i feel it's more important to show

that eggs aren't necessary.)

finally, there's nothing in an egg that we need nutritionally and very

few things you can't make without them - meringue isn't possible as far

as i know, but baking is easy without them once you get accustomed to

the replacements (fantastic info on this at www.theppk.com).

best wishes

ps what do you mean about the stem cells?
