Coconut oil that has been hydrogenated should NEVER be consumed. It is very unhealthy for you. Natural cold-pressed extra virgin coconut oil is now available and is used for health purposes. This oil is a saturated fat that has 3 medium-chain fatty acids. Medium-chain fatty acids are oxidized differently in the body making coconut oil a readily available engergy source. (especially for muscles) Some more health benefits of cold pressed coconut oil are as follows: -aids in thyroid function -protects our bodies from degenerating -improves digestion -strengthens immune systems -it is heat stable(it's smoke point is 450 degrees F) -it melts at room temperature -it smells great and melts in your mouth! -it can be used in a lot of recipes I put a little coconut oil on a piece of wax paper and oil the tops of my fresh baked GF bread. It helps to keep the bread soft and tastes great too! So as you mentioned, you could throw in some banana. That sounds great! I would add both! For a small child you may only want to add a small amount of banana per meal. The rest of the banana can easily be wrapped and frozen for quick use when you don't have any fresh ones! If you're using the banana for health reasons, make sure the banana skin has some brown spots and has reached the sugar state. So even if you're allergic to coconut, you won't be allergic to the oil. I'm really into the stuff. I've been using it over three months now, and it does have a lot of benefits. At first, it can raise your blood pressure, and make you feel like you've had a shot of caffeine because it boosts your metabolism! You have to start with low amounts. Under a tablespoon a day. I was skeptical at first because the Weston A. Price Foundation is a big proponent of coconut oil, and I don't agree with hardly anything they say (they're very pro-meat and dairy). But after researching more, and based on the experience that even those I usually disagree with can be right SOMEtimes, haha, I decided to try it and am glad I did. I have been treating lyme disease for 9 months, and adding coconut oil helped a lot because of all the parasites it kills, and because it's antibacterial, and actually helps the body detox as well. I assimilate food so much better that I don't have to take all the supplements that I did before, OR nearly as much of the detox regimen because the coconut oil helps so much with that. However, if your son has problems with any other member of the palm family, I would use caution, especially if his allergies are the kind which manifest with swelling or breathing problems. A number of folks with tree nut allergies do react to coconut. It is now being classified as a tree nut for labeling reasons and will be required to be listed on labels in the US as such. In many instances, especially from foreign countries, the rules for what constitutes " free " is less than 2%. 2% is more than enough to cause an anaphylactic reaction in someone. I know that my soy allergic soy had to change his asthma medications when they switched the carrier oils to soy lethicin and yet the pharmaceutical companies claim that the lethicin is protein free. They also claim that medical grade lactose is casein free but he reacts to that too. I react severely to them. The thing is, some folks aren't allergic to the proteins which make the transition. I had to respond here and say that when I first started using coconut oil about a year ago, it raised my body temperature from 96 degrees, all the way up to 101 degrees, and it was NOT due to a fever. I simply over-did-it a little on the coconut oil consumption. (What can I say, the stuff is good!) Well, I backed off a little bit, and slowly built myself up to a higher daily dose, and the temperature elevating effects went away. Our family has noticed tremendous health benefits since we started using coconut oil. I try to have some in our food at least once a day. And, BTW, anybody who's curious. I have seen what it's done in my life, and that of my family. I have seen what it's done in the lives of several friends, concerning lowering cholesterol levels, stabilizing and reducing blood sugar levels in people with diabetes, and getting rid of ring worm and troublesome arthritis symptoms. I cannot say enough about coconut oil and it's benefits. I battle thyroid problems, and I believe it saved my life when my doctor wouldn't believe me when I showed every symptom on a list of hypothyroid symptoms. All I can say is, try it and find out for yourself. If you feel better, that's great. If not, then leave it alone. BTW, when I don't eat coconut oil, that's when my weight starts to climb. (Still trying to get the thyroid in balance! It's a slow process.) And please, don't base your decision on one article alone, but do the research yourself. Many links have already been posted. I've had stubborn fungus on my foot for years (sorry to mention this on a recipe board, LOL) plus a case of impetigo that wouldn't go away even after a year's worth of antibiotic and fungal creams prescribed by a doctor. Now it's staying the clearest it ever has, plus the skin underneath which was scarred red (over about 1/4 of my foot) is gradually turning back to a healthy pink color. It's also worked well for me for candida. (It contains caprylic acid which is a yeast killer) I'm not having to take antibiotics for constant infections anymore, which were intensifying both my fungal and yeast problems. Or consequently the yeast medicines either. The coconut oil is one of the main things that's saved me a lot of suffering, and money! Depending on how many toxins you have in your system it *could* cause your face to break out, if you use too much in your diet too fast. Because it does have a detoxifying effect. And one of the main ways your body gets rid of toxins is through the skin. It can also sting slightly on infected skin (though not as much as tea tree oil) because it has antiseptic properties. Yes, Lisa! I've found " alternative medicines " to be lifesaving when doctors couldn't diagnose or treat me correctly for 30 years. It's so liberating not to have to see them anymore, or deal with their ignorance and condescension. Not to mention endless prescriptions. Going vegan nearly 2 years ago was the turning point for my health, and apparently my karma, because all my unanswered questions of a lifetime started falling like dominoes. Not to be overly dramatic, but it really was for me. Something about caring about the suffering of other creatures more than my own even though I was suffering an awful lot myself was what did it. Though I didn't really have the energy at the time to go to so much effort changing my diet, I did it anyway. I didn't go vegan for my own health at all. Or even know of the benefits then. I only found out it would lead to a motherlode later. After less than 6 months my diabetic blood sugar levels became normal, and then I met a very helpful vegan who gave me better advice about even more stubborn problems than any doctor ever did. The medical community is really poor in this country, to finish the rant. I just wanted to post another point of view. Actually, it's very popular with the raw fooders. I even used it a little when I ate all raw for 1 1/2 years. However, I never saw any improvements in my health. And it actually didn't agree with me. A great source for buying cold pressed coconut oil is from the www.thewildernessfamily.com .
