And a hopeful thing as well. I'm a graduate student just now, working on a

MS in nutrition. I'm at the very beginning, so still in classes with food

labs-sort of an advanced home economics class. As an older student, well,

I'm looking forward to meatier classes.

 

 

 

But the point is that we're supposed to eat everything we cook in lab. My

professor was immediately sensitive to my dietary needs (she said, " you tell

me what you need and it's MY responsibility to make sure you have safe

food. " ) I work in a lab group with 3 youngster students, some with very

little cooking experience. They're all determined that everything we cook

will be gluten-free and vegan. These are going to be dieticians who

understand the issues! Next week, we're going to create a gluten-free vegan

shepherd's pie. I think they're all very brave and wonderful. Tonight I

tested at home the pumpkin cake we adapted from one girl's favorite recipe.

I can't wait to hear how she thinks it measures up.

That's cool Laurie because we sure to do need more dieteticians who

understand gluten and dairy free needs - especially those who might come in

contact with the parents of kids with ASD.

I would love to take some nutrition classes or get certified, but I haven't

come across any programs that really seem to offer what I want. I already

have multiple college degrees, so I am not looking to go back and get

another BA degree, which are the options I seem to be finding. Does anyone

know of any certification programs in nutrition?

I looked around for other options also, but in my area didn't find anything

that would give me weighty credentials. I also have multiple degrees, but

not in the sciences. So I have lots of prerequisites to catch up on before

graduate level coursework. Sigh.

I never thought it would be so hard. I have Bastyr University here, great

school, but, once again, it would be a full BA Degree. I would love some

sort of Nutrition Lite program or certification.

The Institute for Integrative Nutrition in NYC has some pretty neat

programs. I am in school for Nutrition right now in a conventional RD

program, but have considered taking some classes with them. They and Bastyr

are the only places I have found that have a more whole foods approach. If

anyone knows of others I'd like to know, too.

I believe that Loma Linda University has graduate programs in nutrition that

have a whole foods approach. They teach from a vegetarian perspective and

are knowledgable in teaching about those with special needs diets.
