My dial-up internet is very slow and especially troublesome today. It is hard to load all the pages one by one looking for a certain recipe. Thanks so much. The box mix we used to have has some soy sauce powder in it, which of course contains wheat, so I need to try and make my own from scratch. Lisa Wife to Chuck (12 yrs.) You will find them in the " Mains " folder under " Burgers, " Meatballs " , Patties, Sausages etc. " then " Falafel " . Here they are : Falafel *This recipe uses dried chickpeas (garbanzo beans). 1 lb (450 g) chickpeas, dried 2 medium onions, quartered 2 large cloves garlic, chopped 1 bunch parsley, large stems removed 2 tsp ground cumin 2 tsp ground coriander 1/2 tsp GF baking powder 1/2 tsp salt 2 cups oil (for frying) Combine the chick peas, onion, garlic, parsley, cumin, coriander, baking powder, and salt in a blender. Grind until mixture becomes very smooth (it helps if you partially chop, or dice the ingredients before you put them in the blender). Let paste rest for 30 minutes. Take walnut-sized lumps and make round, flat patties. Let the patties rest for about 15 minutes to preserve their shape. Heat oil in a deep pan so that the patties can be submerged. Fry the patties until golden brown. Place them on a plate covered with paper towels to absorb excess oil. ------------------------------- Falafels Blend until smooth: 4 cups chickpeas (garbanzos) 3 cloves garlic 1 cup water Pour into mixing bowl and combine with: 1 lb (450 g) tofu 1 tsp salt 1 medium onion, chopped fine 1/3 cup GF soy sauce -OR- Bragg's Amino Acids 6 cups GF bread crumbs Mix until moist, roll into balls and fry in 1/2 inch (1.25 cm) oil until golden brown around edges (or mold into balls and flatten on cookie sheet and bake until toasty). --------------------------- Falafel Source: Fun with Natural Foods 1 cup dried garbanzo beans (not canned) --- equals 2 cups soaked 3 green onions -OR- 1 small onion 1/2 cup parsley, pack into cup 3 cloved garlic salt, cumin, sesame seeds Soak beans overnight. Drain and combine with onions, parsley, garlic. Put through fine blade of meat grinder (or blender or food processor). Mix well. Season to taste. Let stand at least 15 minutes. Mixture will be quite soft. Heat oil in fry pan. Make into patties and roll in sesame seeds. Brown on both sides. Fry slowly. OR shape into balls 1 1/2 inch (4 cm) in diameter and bake on oiled pan at 350°F (175C) for 30 minutes. Use as a filling for arabic bread, adding tomatoes, fresh parsley, onion, lettuce, olives, cucumbers, or anything else you desire. May be wrapped in foil and heated. Great on rice cakes too! --------------------------- We had these tonight.. they were GREAT!! I did not have some ingredients so I will tell you in () what I did differently. Falafel Burgers Source: Meatless Burgers by Louise Hagler Adapted from " Lighten Up! " with Louise Hagler. These burgers, made from cooked garbanzo beans rather than garbanzo bean flour, are easy to digest. They can be pan fried or oven baked to make a lower fat version. 2 cloves garlic 2 cups cooked garbanzo beans (chickpeas) -OR- one 15-ounce (425 g) can, drained (I used the can) 1/4 cup water or bean broth (I used water) 1/2 tsp salt (sea salt) 1/4 tsp black pepper 2 cups GF bread crumbs 1/2 cup minced onion 1/4 cup chopped parsley (I did not have any, so I used thyme and vegit, just sprinkled in till I tought it looked good) 1. Preheat oven to 350 F (175C) 2. In a food processor, mince the garlic. Add the garbanzo beans, water, salt, and black pepper, add process until creamy. (I used my blender) 3. Transfer the mixture to a bowl. Stir in the bread crumbs, onion, and parsley, and form into burgers. (I had to really mix it well with my hands to get it sticky.) 4. Arrange the burgers on an oiled baking sheet and bake for about 15 minutes on each side until browned. The burgers can also be pan fried in olive oil until browned on each side. (I baked mine.) Yeilds 8 (I got 5 1/2). Per burger: calories 101, total protien 4g, soy protein 0, fat 1g, Carbohydrates 18g, Fiber 3g, Calcium 40mg, Sodium 195 mg. ------------------------------- Tahini Sauce for Falafel Source: www.food TV.com 1/3 cup tahini 1/2 cup water 3 to 6 teaspoons fresh lemon juice 1 /1/2 teasponns crushed garlic 1/2 teaspoon salt pinch cayenne Place all ingredients in a food processor. I have some garbanzos soaking right now, along with some yellow peas and green peas, since the Fantastic Foods brand (non-GF) had them in the ingredients list also. Lisa Wife to Chuck (12 yrs.)
