Guest guest Posted February 28, 2007 Report Share Posted February 28, 2007 Four Bean Salad with Tomato Pesto Dressing 2 cups rocket (arugula) leaves 420 g (15 oz) can four bean mix 6 - 8 cherry tomatoes, halved 1/2 avocado, sliced 1/2 Lebanese cucumber, sliced 4 tsp tomato pesto (see " Condiments " folder) 1/2 cup fat free French dressing (see also " Condiments " folder) 1. Combine rocket leaves, drained four beans mix, tomaotoes, avocado, and cucumber. 2. Place in a serving bowl. 3. Combine pesto and French dressing, and drizzel over salad. Serves 4.
