Guest guest Posted March 7, 2007 Report Share Posted March 7, 2007 Satay Tofu Pizza 1 quantity GF pizza dough -OR- 1 large prepared GF pizza base one 300 g (10 1/2) packet firm tofu, chopped 1/3 cup vegan sour cream, 1/2 cup roasted peanuts, chopped fresh coriander (cilantro) leaves Satay Sauce: 1 tablespoon (4 teaspoons) olive oil 1/2 onion, chopped 2 cloves garlic, crushed 1/2 cup peanut butter, smooth or crunchy (your choice) 4 teaspoons wheat-free tamari 2 tsblespoons (8 tsp) sweet chilli sauce 2 teaspoons brown sugar half 270 ml can (just over 1/2 cup) coconut milk 1. Preheat oven to 220 C (425 F). Place pizza dough or prepared base onto a lightly greased baking tray. 2. Prepare satay sauce: In a saucepan or fry pan saute onion and garlic until cooked through. Add remaining sauce ingredients and stir well. Add tofu. Reduce heat and simmer for 10 minutes, stirring occasionally. 3. Spoon satay sauce over pizza base. Bake for 20 minutes.
