Guest guest Posted March 11, 2007 Report Share Posted March 11, 2007 Curried Rice Salad 2 cups cooked long grain rice, chilled 1 apple, core removed, chopped 1 red onion, finely chopped 1 green capsicum (bell pepper), diced 1/3 cup raisins 1/3 cup fresh flat-leaf parsley, chopped Dressing: 1/4 cup olive oil 1/4 cup GF white vinegar 2 teaspoons curry powder 4 tsp caster (superfine granulated) sugar 1 garlic clove, crushed 1. Place rice into a large bowl. Add apple, onion, (bell pepper) raisins and parsley. Toss gently to combine. 2. Make dressing: Combine all ingredients, and salt and pepper, in a screw-top jar. I love rice salads.
