Guest guest
Broccoli Rabe and Mixed Mushroom Stir-Fry 1 tablespoon (4 tsp) vegetable oil 2 garlic cloves, sliced 100 g (3 1/2 oz) shiitake mushrooms, sliced 150 g (5 1/3 oz) oyster mushrooms, sliced 200 g (7 oz) button mushrooms, sliced 1 bunch broccoli rabe (see chef's tip), trimmed, chopped 1/3 cup GF vegetarian oyster sauce (see note) 1. Heat a wok over high heat until hot. Add oil and swirl to coat. Add garlic and stir-fry for 30 seconds or until aromatic. Add mushrooms and stir-fry for 1 to 2 minutes or until just tender. Add broccoli rabe leaves and florets and stir-fry for 1 minute. 2. Cover wok and cook for 20 seconds or until broccoli rabe is wilted. Add oyster sauce and stir-fry for 1 minute or until well combined. Serve with rice. SERVING SUGGESTION: This stir-fry is delicious served with steamed jasmine rice. CHEF'S TIP: Broccoli rabe is a slightly bitter, leafy green vegetable with a flower that resembles a broccoli floret. It's popular in both Italian and Asian cuisine. You could replace it with 2 bunches broccolini or 1 large bunch choy sum. NOTE: As it seems to be impossible to find a GF vegetarian oyster sauce, try making your own. http://www.bryannaclarkgrogan.com/page/page/773148.htm#homemadechinese Serves 4.
