Guest guest Posted April 8, 2007 Report Share Posted April 8, 2007 Char-Grilled Mango with Lime and Mint Sugar 2 tablespoons (8 tsp) white sugar 1 lime, rind finely grated 1/4 cup mint leaves 2 mangoes 4 scoops vegan ice-cream, to serve 1. Process sugar, lime rind and mint in a food processor until well combined. 2. Preheat a barbecue plate on medium-high heat. Using a sharp knife, cut 2 cheeks from each mango, cutting as close to the stone as possible. Line a barbecue plate with non-stick baking paper. Place mango, flesh side down, on baking paper and cook for 4 to 5 minutes or until golden. 3. Score 3 vertical lines and 3 horizontal lines into each mango cheek (don't cut all the way through). Turn mango skin inside out. Place mango cheeks on serving plates. Sprinkle with lime and mint sugar. Serve with ice-cream. TIP: Alternatively, mango cheeks can be cooked in a frying pan. Use baking paper in the same way as in step 2.
