It's posted under 'snacks and appetizers'. [Kim, would you mind reposting this as well in the " Mains " section under " meatballs " ? Thanks] I hope you enjoy it as much as our family does! LaDonna Tofu Croquettes and Tartar Sauce This is my mom's recipe and has been in the family for nearly 40 years. A favorite!!! We used to fry these in a lot of oil (or deep-fat fry) but now we form them into balls and place on a baking stone or cookie sheet and bake them. It reduces the calories and makes them healthier. Croquettes 1 lb (450 g) tofu 1 oz ( 30 g) cashews - coarse chopped 1 oz ( 30 g) pimento 1 oz ( 30 g) onion 1 oz ( 30 g) celery 1 oz ( 30 g) green pepper 1/2 tsp garlic salt 3/4 tsp seasoning salt 1/2 tsp salt 1/2 tsp nutritional (savoury) yeast (-OR- flavoring like Kitchen Boquet) 1 Tbsp (3 tsp) Marmite (check for gluten) or Bragg's Liquid Aminos (or wheat free soy sauce) chicken-style seasoning to taste You may be more generous with the vegetable ingredients. Mix together well. Form into patties or balls. Fry in hot skillet or bake on cookie sheet at 350 F (177 C) until golden brown. ------------------------- Tartar Sauce 1 Tbsp (3 tsp) onion 1 Tbsp (3 tsp) pepper 1 Tbsp (3 tsp) pimento 2 Tbsp (6 tsp) pickle 1 cup vegan mayonnaise 1 tsp lemon juice salt to taste Mix ingredients together well. Use as a sauce for the croquettes. You may add 2 Tbsp (6 tsp) of tomato juice for added color and flavor. Enjoy!!!!! -------- COMMENTS ---------- -- We use coarse, chopped cashews. I think the recipe calls for an inadequate amount ... so I use more and I think it enhances the flavor and texture of this croquette. LaDonna ---------- -- These are really yummy - a real hit at our dinner table. I tend to be very generous with the cashews, vegetables and the seasonings (especially the nutrtional yeast ... 2, 3 or more Tbsp). I use a food processor to mix them, then add a few crumbs, shape them into little croquette shapes, lightly roll in more crumbs, and fry in just a little oil. They're great for school lunches too. I use the extra firm tofu, Gina. For dipping, baking rather than frying would probably work best --- holding together more firmly.
