Dear Laura,

Try this site. I am not sure they have your exact

recipe, but it wouldn't hurt to check. Their recipes

are alphabetized, and you can do a search as well.

It's terrific vegan site.

Welcome, Laura. I don't have a recipe, but have you checked out How it all

Vegan! or Garden of Vegan? I think one of those books might have a recipe

for you.

French Toast

Source: Lifestyle Center of America

1 cup cashew pieces, raw and rinsed

1 cup water, warm

2 cups water, warm, additional

3 Tbsp. cornstarch

1/4 cup flaxseed

1 Tbsp. vanilla

3/4 tsp. salt

1/4 tsp. coriander or cinnamon

12 gluten free bread slices

Blend cashews with the 1 cup of water for 1 - 2 minutes until creamy. Add

rest of ingredients (except bread) and blend on high speed until flaxseed

thickens mixture. Pour into a bowl and dip bread into batter until

well-soaked. Place close together on frying pan or a griddle that has been

prepared by non-stick cooking spray or vegetable oil. (If using griddle,

set it to 350 degrees F.). Spray top with non-stick cooking spray before

turning (optional). Cook until golden brown.

Variation: Bake at 400 degrees F. for about 15 minutes or until light brown

on bottom. Turn and bake 5 minutes more.
