They were absolutely wonderful, filled with sliced pears and walnuts and sweet (but not with sugar). I can't think of a time I'd ever enjoyed breakfast more--and I'm a breakfast connoisseur! I'm not completely certain they were gluten-free however... I was wondering if anyone happens to have a recipe for something like that? Or a resource where I might find one? Here's the closest and it might be able to be adapted. The breakfast you described sounds wonderful! ~ LaDonna ~ SOUTHERN JOHNNYCAKES 2 cups corn meal 1 tsp salt 3 Tbsp (9 tsp) margarine (-OR- olive oil) 2 Tbsp (6 tsp) brown sugar 1/2 cup soy milk (-OR- alternative) 2 cups boiling water Mix all ingredients, except water. Blend well. Add water slowly to make a fairly soft batter but one which will hold its shape. If too thick, add a little extra water. Drop by spoonfuls onto a hot greased griddle and flatten to 1/2 inch (13 mm) thick. Turn when brown around the edges. If anyone on here happens to live in Portland, OR, I highly recommend Paradox Cafe' on Belmont. It's vegan, although, they seemed to struggle a little bit with the gluten-free. Guest guest Posted May 7, 2007 Report Share Posted May 7, 2007 I tried this recipe on Saturday. I've never cooked with cornmeal before and I'm wondering if maybe I did something wrong. I put all the ingredients together (I measured even and after I put in only 1 cup of boiling water, I noticed the batter was really runny. I used just a spatula to mix it (maybe I should have pulled out my hand mixer?) I added about 1/4 cup more of the boiling water to it. In the pan, the batter thinned out pretty significantly when I poured it in. Nor did they " fluff " up like the ones I had eaten in the cafe', but the final taste of the corn cakes was really yummy (and similar)... Is there a trick to cooking with cornmeal? Maybe there's something we can add to the recipe to give it a fuller texture? Thanks!
