Chinese cabbage, mint, coriander (cilantro), iceberg lettuce and bean sprouts are other good fillings. Look for rice paper sheets in the Asian food aisle at supermarkets. Rolls are best served immediately after rolling. two 200 g (7 oz) packets (8 squares) flavoured tofu 1 large Lebanese cucumber 16 round rice paper sheets (22 cm [9 " ] diameter) 16 garlic chives, cut crosswise in half 1 1/2 cups grated carrot 50 g (1 3/4 oz) snow pea sprouts Dipping Sauce, to serve (recipe follows) 1. Cut each tofu square into 4 strips. Halve cucumber lengthwise; remove seeds. Cut crosswise in half. then each piece into 8 sticks. 2. Soak a rice paper sheet in a bowl of warm water for 10 seconds until just soft. Lay flat on a board covered with a clean tea-towel. 3. In a mound on the centre of sheet, parallel to bottom edge of board, place 2 strips each cucumber and chive, 1 tablespoon carrot, 2 pieces tofu and some sprouts. Fold lower half of sheet over filling, fold in sides, then roll up tightly to enclose filling. 4. Repeat with remaining sheets and filling. Serve rolls immediately with dipping sauce. Makes 16 to serve 4. ------------------------ Dipping Sauce Use as a stir-through sauce for stir-fries and noodle dishes also. 1/4 cup barbecue sauce 1/4 cup sweet chilli sauce 2 teaspoons lemon juice Combine all ingredients in a small serving bowl.
