Chopped Liver

I was checking out the recipe files, and found the mock chopped

livers, and thought I'd add my favorite! I grew up eating a lot of

liver products, and after I went vegan about 8 years ago, Liver was

one of the few things I craved. I know, gross. I was so glad to find

this recipe!

 

This is from Vegan Deli by Joanne Stepaniak.

 

1 1/2 cups dry lentils

4 cups water

2 Tablespoons extra virgin olive oil

2 large onions, chopped

1 cup finely ground walnuts

1 tablespoon tamari (optional, or more salt)

salt and pepper (I like lots of pepper)

 

Rinse the lentils and place in a large saucepan with the water. Bring

to a boil, reduce heat, cover, and simmer for 45 minutes. Remove the

cover and continue to simmer, stirring often, until any liquid has

cooked off and the lentils are very tender.

Meanwhile, heat the oil in a large skillet. Add the onions and cook

until very dark and carmelized, about 1 hour.

Place the Lentils, onions, walnuts, tamari, salt, and pepper ina food

processor, and puree into a thick paste. Chill before serving,

although it is great warm. Makes about 4 cups (12 servings) Enjoy!

how possible is it to clean appliances, etc. that have been used for baking with

gluten/wheat in the past? is it safe to buy used things for celiac cooking?

It does depend on the appliance/utensil etc. Any teflon, wood,

plastic, nylon or cast iron cannot be considered safe. Nor can any

appliance with any little nooks and crannies that can't be reached.

The good news is stainless steel and glass can be given a thorough

wash and be reused.

But things like the ABM, the blender, and the flour mill, should be replaced

OR used with batches you don't mind throwing away for several times through.
