Guest guest Posted June 5, 2007 Report Share Posted June 5, 2007 Campfire Home Fries 6 potatoes 1 onion 6 cloves of garlic 1 tbsp. chopped cilantro 2 tsp. of paprika chili powder hot red pepper flakes salt and pepper olive oil Earth Balance/vegan margarine These hardy home fries taste great around a campfire on a chilly spring morning. The prep is all done home ahead of time so they're easy to throw on the fire at the campsite. The evening before you leave for a camping trip: Wash and cube (chunky) around 6 potatoes with the skins still on. Put them in boiling water for about 20 minutes so they partially cook, then drain and let cool while you pack. Once the potatoes are cool, put them in a large zip lock freezer bag with 1/2 chopped onion, about 6 sliced cloves of garlic, a tablespoon chopped cilantro, about 2 teaspoons paprika, a sprinkle of chili powder, hot red pepper flakes, salt and pepper, olive oil and/or some pats of vegan margarine. Keep refrigerated until breakfast around the campfire. Pour it into a skillet or wrap up in aluminum foil and put it on a grate over the fire for 15 or 20 minutes.
