Pawpaw and Pineapple Jam

 

 

2 firm pawpaws

1 pineapple

125 g (1/2 cup)(4 1/2 oz) chopped glace ginger

2 cups lemon juice

2 kg (8 cups)(4 lb 6 1/2 oz) sugar

 

 

1. Quarter, seed and peel pawpaws, chop into 2 cm (3/4 " ) pieces.

 

2. Peel pineapple, remove core, chop pineapple into 2 cm (3/4 " ) pieces.

 

3. Combine pawpaw, pineapple, ginger and lemon juice in boiler, cover,

bring to the boil, reduce heat, simmer uncovered for 5 minutes. Add

sugar, stir constantly over heat, without boiling, until sugar is

dissolved. Bring to the boil, boil uncovered, without stirring, for

about 30 minutes or until jam will jell when tested on a cold saucer.

 

4. Stand 5 minutes before pouring into hot sterilised jars; seal when

cold.

 

 

Makes about 12 cups.

Pawpaws are also a fruit from a tree native to North America and

completely unrelated to papaya.
