I have a salad or smoothie for lunch. I have a salad or soup or something along those lines for dinner. It took me awhile to adjust to the lack of salt, but it happened. I changed the way I was cooking. No fried or pan fried foods at all. Either boil, broil on a rack (or George Foreman type grill), bake on a rack, steam with a rack, grill. Anything where the grease is completely away from the food. No gravy. This type of year, I steam a large steamer full of vegetables every day and just pig out. It is nothing for me to have them for breakfast. Summer squash, zucchini, new potatoes, green beans, sweet onions. They are delicious with a dab of butter and salt and pepper. My steamer, with its rack, it the main utensil I use in the summer. Maybe this will help. And skip the desserts and have fresh fruit until your cholesterol is back in sync. You can do it. I got my cholesterol and triglycerides test results last Monday and well, I'm pretty much a walking heart attack. I can't take any statin drugs for the cholesterol because I had that rhabdomyalisis or however it's spelled (the muscle weakness) last time. So I'm now on a low fat, low cholesterol, low sodium, low sugar diet. Watching the sugar and sodium, I'm having a hard time reaching 1000 calories a day - I may actually reach that today. Most days I'm averaging about 700 max. because everything just tastes so awful without the salt or sugar. Also, I have no thyroid so I have to wait an hour after I get up in the mornings before I can eat anything at all. I'm open to suggestions of tasty things to eat! One piece of advice is to get the ripest produce you can find, visiting the store often. Farmer's markets and greengrocers are good sources. Grow some of your own if you can. There are more and more fruits and veggies that can be grown in containers. Herbs are a big deal when you have to limit so much that adds flavor. Experiment with as many as you can to see what you like best. Soups are good foods you can make with a little of this and a little of that and you combine as much flavor as you can with little fat. It's full of flavour and low sodium, low cholesterol, low sugar, and free, with vegetarian/vegan options *yeah!*. My dh (omni) lost 30lbs on the diet and I've lost 15lbs (lacto-ovo veggie - I had less to lose). The diet is written by a couple of cardiologists. Once you get started, and get informed, this just seems like the only thing to do. This is a " whole food " diet plan - No white stuff (processed foods). If you can afford to pick up the book, it's a really easy read. I've been following Eat to Live since January and I'm working on reversing type 2 diabetes and lowering my cholesterol. In January, my A1c was 12.2 and my cholesterol was 280. As of this week, my A1c is 5.4 and my cholesterol is 195. This is purely by diet and walking, I am not taking any meds other than synthroid. I'm thrilled that the A1c is considered normal (not diabetic at all). But I want that cholesterol to come down further. (They tell me it takes time.) You can do this! He says that if I ate nothing but rice cakes, it would only lower my cholesterol about 15 points. He says that the body makes cholesterol not only from the fats we eat, but the fats that our body has stored. That is why loosing weight lowers our cholesterol. But in the long run, even eating nothing but rice cakes, it would come back up, anyway. It is something in our bodies that determines how much it wants and will make it out of our own body tissues is there isn't enough incoming or stored fats. He experimented on himself so to speak, and was very careful about folloing a 100% vegan and their recommendations very strictly. To summarize, it is not only vegan but they ask you to include the following every day: servings of okra and eggplant almonds soy products psylliym husks (I do not care for this one myself) So continuing on what my brother did, in between thanksgiving and christmas one year he did this and measured his cholesterol before and after the 4 weeks of being on this strict diet (he works in a lab that can measure blood cholesterol very accurately) and it dropped from 230 to 190 in just 4 weeks. His intentions were not to drop any weight and his diet was in the 2,000 calories range, so take a look at some of the examples they give. All my siblings and I have a problem with cholesterol, it is genetic. My cholesterol is high even though I eat very low in fat and cholesterol. Can you imagine what it would be on a regular american diet? I would probably be 6 feet under by now. In any case, I am not a walking heart attack because my HDL to LDL ratio is very high, but it is still too high over all. You will learn to enjoy the subtler fresher tastes of foods lower in fat and unprocessed. Fruit tastes delicious and so do fresh vegetables and salads. You also learn to like foods with much reduced fat. Soups made with vegan ingredients can be made very yummy. Look at the recipe files here, you will find many tasty low fat no cholesterol recipes. I do not understand why you cannot have salt and sugar though. Guest guest Posted July 19, 2007 Report Share Posted July 19, 2007 My doctor wants me to watch my sodium intake because although it is in the normal range, mine has always been around 100/60. So for me, the upper range of normal is borderline high. As far as the sugar goes, if your triglycerides are very high, excess sugar intake can lead to pancreatitis and kidney problems. I had a strep infection in my kidneys several years ago so that's one problem I don't need! The infection left me with a 50% chance of needing a kidney transplant as it is. Guest guest Posted July 19, 2007 Report Share Posted July 19, 2007 The eggplant and okra apparently do something to lower cholesterol but I have not been able to get a good explanation anywhere on the mechanism. What this diet does is to combine all the known ways to lower cholesterol into one eating plan. If you omit the eggplant and okra, it will go down, but not as fast as my sibling got it down. It just so happens that I LOVE both okra and eggplants. On the other hand I would not do the metamucil (psyllium husks) stuff, cannot stomach it....so just follow it as much as you are able and good luck! On the salt you will find that if you get away from processed foods, your sodium intake will go WAY down. Easy examples are: cook your own beans instead of using canned beans, make your own tomato sauces for pasta and pizza, things like this. My situation is different on the salt, I do a lot of endurance sports in a hot climate, eat very little processed food, so I do get muscle cramps in the summer due to not eating enough salt sometimes. That means no wheat or gluten, corn, dairy, soy, yeast, alcohol, or vinegar. Also no refined sugars or flours, food additives, or high fructose corn syrup. B/c there is reason to believe that my gut ecology is less than ideal, I must also avoid lots of sugars from fruits. I'm losing interest in eating now, and I need some good meal ideas. I work as a nurse and time is sparce, but I am willing to find time to cook b/c it is very important to my health. I've suffered from a lot of GI distress and IBS! It's time to take charge and heal! Does anyone know of any products that I can buy that will comply with my diet? Lundberg and Tinkyada have gluten free pastas that are good. Mary's Gone Crackers and Sesmark crackers are also options. Buy bags of good frozen vegetables (do you have a trader joe's?). Put rice and frozen veggies in a microwaveable container to heat up at work. Add any sauce that's safe for you, or just herbs. Or use Quinoa instead of the rice. You're limited in salad dressing, of course-I love this right now: flax seed oil and lime juice. Maybe shop at a fabulous produce store for now to inspire you? I have a crop share in a csa this summer-the quality and variety is very inspiring right now. I'm indulging in lots of berries and peaches right now.
