Vegan Pesto

Hello. Could you please give me a bit more info on the Vegan Pesto?

Approximately how much pine nuts, garlic, olive oil & basil leaves?

Do you cook it at all? Is the garlic raw or cooked in some way?

 

It sounds like something I'd really like. I've never had any kind of

pesto but love garlic.

Hi Tammy

 

Colin says he uses 3 to 4 large sprigs basil without the stalks, 1 large crushed garlic clove, 2 oz pine nuts, 4 tablespoons olive oil. Put basil, garlic and pine nuts in blender and whizz until smooth, then gradually add the oil.

No you don't need to cook anything. It has a lovely fresh taste.

Vegan Pesto

Source: Recipzaar.

 

 

1/2 teaspoon coarse sea salt

2 garlic cloves, peeled

1 tablespoon (3 tsp) pine nuts

1 cup fresh basil leaves

5 tablespoons (75 ml) extra virgin olive oil

 

 

1. Place sea salt, garlic, and pine nuts in a large mortar and crush

with pestle to make a smooth sauce. Add a small ammount of basil

leaves and grind against sides of mortar until they break apart.

 

2. Repeat until all basil leaves are used up and the mixture has

formed a coarse paste. Add olive oil and stir until mixture is smooth

and creamy.

 

 

Serves 4 - 6.

Can Pesto be made without the pine nuts? I'm have problems with seeds

and nuts.
