Guest guest Posted August 7, 2007 Report Share Posted August 7, 2007 Pan-Fried Celeriac 2 large celeriac bulbs 1 lemon, halved 1/4 cup olive oil 2 garlic cloves, crushed 2 tbsp (8 tsp) chopped flat-leaf parsley 1. Peel celeriac and immediately rub all over with cut side of lemon to prevent discolouration. Cut into 1 cm (3/8 " ) cubes, place in a saucepan of salted water and bring to the boil. Turn heat to medium and simmer for 8 minutes until just starting to soften. Drain well. 2. Heat oil in a large frypan over medium heat, add celeriac and garlic and cook, stirring occasionally, for 8 to 10 minutes or until celeriac is golden and cooked through.
