Guest guest Posted September 6, 2007 Report Share Posted September 6, 2007 hi kim i make a different kind of spread each week for my son's lunchtime sandwiches. usually it's hummus. this week i soaked brazil nuts and cashews for a few hours and then whizzed them up with green olives (garlic stuffed, cos that's what we had in the frig) and a few sundried tomatoes. it's good! you could make it thinner to have as a dip - just add some water or vege stock or oil. cheers alice (across the ditch in auckland!) Harry ------------------------- Dipping Sauce 2 tablespoons raw almond butter 1/2 tablespoon agave nectar 1/2 small lime, juiced 1 pinch sea salt 1/2 teaspoon cayenne pepper Mix all ingredients, adjusting measurements to suit your personal tastes. No special equipment is necessary. Enjoy it as a dip for veggies or fruit. The sauce also tastes great on a collard green wrap filled with greens, avocado slices, shredded carrot, sliced portabello mushrooms and broccoli sprouts. ------------------- Veggie Dip 2 celery stalks 2 carrots 1/2 cup tahini (raw organic) 1 Tbsp. lemon juice handful of parsley Put through a food processor. ------------------- Onion Dip 2 cups macadamia nuts 1 teaspoon sea salt 1 cup onions , diced 3/4 cup water Preparation In a vita mix, blender, or food processor (best results from vita mix) blend macadamia nuts, water, and salt until smooth and creamy. Start with 1/2 cup water and add more only if needed (up to 3/4 cup) to make mixture blend. Keep this thick as you can and make sure it’s as smooth and creamy as possible when done. Remove from vita-Mix and add in the onions by hand. Mix gently and chill. Note: make sure to add the onions in by hand after the blending. I ened up making a combination of a couple of recipes using the ingredients I had at home. The result was a sort of sun-dried tomato dip. I also made a few very quick dips by simply adding some sweet chilli sauce to some soy cream cheese for one and some finely chopped gherkins to soy cream cheese for another. I served them up with a large platter of sliced veggies, olives and marinated mushrooms. To my surpise the platter ended up empty.
