Does anyone have some healthy and tasty breakfast ideas that everyone will love regardless of whether they are vegan/gluten free? I am going to be hosting a brunch and I want everyone to be happy - and surprised that gluten free vegan food can be tasty! Guest guest Posted October 10, 2007 Report Share Posted October 10, 2007 The first thing that comes to mind is tofu scramble. I believe that there are recipes in the files. If not, just crumble some tofu in a skillet with just a smidge of olive oil. Add diced onion, peppers and any other veggies you'd like. Add some tumeric (for color - like scrambled eggs), onion and/or garlic poweder and maybe some chicken spice mix. And voila! Other options are vegan quiche or fritatta, homemade muffins or tempeh sausage. Okay, now I am hungry... And plain pancakes served with loads of toppings, like a warm blueberry maple syrup, sliced bananas and other fruits, applesauce, cinnamon sugar to sprinkle on top, or whatever you'd like. tofu scrambles are always nice too.
