Our family has been going through a great deal of medical problems and I am finding it hard to have my daughter's food prepared while I am at the hospital with my youngest. I have 5 children, 2 with seizure disorders...one of which has autism. I have hired a respite worker and I am going to have her cook for Asia (10) She is going to help me get meals made and put in the freezer so that when the going gets tough I have healthy food made for her. What I need are tried and true recipes that freeze well. They cannot contain tomatoes (or peppers) because Asia is seriously allergic to them. What recipes are freezable and still great for a kid to enjoy. Thanks ahead of time. I'm a picky eater, pickier than most kids. Do you think they'd like frozen pesto pizza? (No tomatoes or peppers of course) You wouldn't be able to freeze the pizza as a whole pre-made, but it could be very easily prepared. The shells I use for this do fine in the freezer and all you'd need to add is pesto and cheese (I don't know if any of them are lactose intolerant or vegan also in which case use a soy cheese!). Also another thing I eat that keeps really well in the freezer are stuffed shells, although the problem of a sauce comes into the equation, they do remarkably well in the freezer. I use Tinkyada shells, if you could figure out some different variation or something with these they freeze really well and cook great in the oven afterward.
