Thanks for the recipe! Where do you get rice crumbs? Can you use brown

rice?

Also I can't eat corn right now (it's allergenic). Can I leave out the corn

relish and substitute something else? What could I substitute?

Vegie Burgers

 

 

1 cup lentils - boil for about 20 minutes (or until tender), then

drain

2 tablespoons olive oil

1 small onion - chopped

1 clove garlic - crushed

1 zucchini - grated

1 carrot - grated

1 cup cooked and mashed pumpkin

1/4 cup corn relish

1/4 cup sesame seeds

2 tablespoons chopped parsley

2 cups bread crumbs (or rice crumbs)

salt and pepper to taste

extra crumbs for coating

 

Fry onion and garlic in olive oil. When onion is clear , add grated

zucchini and carrot - cook until tender.

Mix all ingredients together. Form patties and coat in crumbs. Fry in

a little oil until golden on both sides.

Can you find a corn free salsa? That would probably replace the corn relish or

a vegan antipasto. Corn relish is just a kind of pickle, so pick one of your

favourites, IMO. To replace bread crumbs I have used a couple of things in the

past - smashed rice cakes, or puffed rice cereal. Maybe not what the poster

intended and it will be interesting to see what the original meant, but that's

what we've done.

Hi Shelley,

 

Rice crumbs are simply crushed baked rice. There are 2 brands

available here in Oz. Orgran Multipurpose Crumbs are available

at The Gluten Free Pantry. I find them very quick and easy for

replacing bread crumbs.

You could use anything that you would normally use to replace bread

crumbs. I normally use regular bread crumbs for most of the family,

and mix a smaller amount with rice crumbs for my GF son. (This

reduces the cost.)

To replace the relish you could use any of the things that Brenda-Lee

suggested. As long as it has a bit of a " bite " it should be fine.

Vegie Burgers

 

 

500g coliban potatoes, peeled, quartered

1/2 cup frozen baby peas

2 medium carrots, peeled, finely grated

lOO g (3 1/2 oz) button mushrooms,finely chopped

1/4 cup GF flour

salt and pepper, to taste

3/4 cup seasoned GF stuffing mix

1/4 cup vegetable oil

 

 

1. Cook potatoes in a saucepan of boiling,salted water for 8 minutes.

Add peas. Boil for 2 minutes or until potatoes are tender. Drain.

 

2. Remove to a bowl. Mash well. Add carrots, mushrooms and flour.

Season with salt and pepper. Stir to combine.

 

3. Using your hands, shape potato mixture into 6 patties. Place

stuffing mix on a plate. Coat patties in stuffing mix.

 

4. Heat oil in a frying pan over medium heat. Cook patties, in

batches, for 2 minutes each side or until golden and heated through.

Drain on paper towel.

 

 

 

SERVING SUGGESTION: Top GF split buns with lettuce, tomato, Vegie

Burgers, soy cheese, chutney and other bun halves. Serve.

 

 

 

Makes 6 burgers.

Hi Pam,

 

I can't tell you if any US companies make a GF stuffing mix, but here

in Australia Orgran do make one. I have tried it and personally didn't

like it. I found the lemon flavouring in it to give it a weird taste.

Thanks for the info! I definitely believe the U.S. is behind other countries in

their knowledge of gluten intolerance, and of offering the best array of GF

foodstuffs.

 

It'll be really wonderful when and if the U.S. ever catches up!! : )
