Baked Oatmeal

 

3 c. rolled oats, certified gluten free, organic

3/4 c. raisins or chopped dates

1/2 c. coconut, unsweetened

1 tsp. salt

4 1/2 c. water

1 c. blueberries, fresh or frozen

 

1. Mix all ingredients in oil-sprayed 13 x 9-inch pan.

 

2. Bake uncovered at 350° for about 1 hour.

Hi Lisa,

 

Our family was skeptical and cautious. But, we decided to try them

and there have been no adverse reactions at all. Believe me, this is

not the case with regular oats! We found certified gluten-free,

organic rolled oats at the health food store. Here's the information

on the package we've been using:

A 2.75 lb. bag cost nearly $10.00 --- so they are expensive. But,

we've been able to stretch them out quite well. 1/2 cup dry to 1 cup

water makes great oatmeal in the morning! The oats are delicious and

we've been enjoying them very much!

You can also pick them up at Wild Oats (but I believe they're closer to

$13/bag there...)

I buy them all the time at Lingberries market here in Vancouver Wa. They are

very Spendy, but worth it for a treat once in a while.
