Guest guest Posted November 8, 2007 Report Share Posted November 8, 2007 I don't know if you really have exhausted all the milk subs (and I'm so sorry if you literally can't have any!), but I used hazelnut milk to make hot chocolate a couple of weeks ago and really enjoyed it. I just used Ghirardelli, though I love Green & Black's as well. Not cheap, though, clearly. I also found a coffee shop in Atlanta that will steam rice milk for drinks, and that was tasty, too. Guest guest Posted November 8, 2007 Report Share Posted November 8, 2007 Well, I'm allergic to soy, tree nuts, oats, dairy. I've had problems with every rice milk I've tried. And right now, I can't have seeds,or coconut. I just had a baby, so my system is out of whack. So I need to retest stuff again in a few months, after I completely recover fron pregnancy & delivery. I need to make sure anything I make is free of corn products and everything I mentioned in the other email I just sent. where in the world do you find natural cocoa flavor? And is it really needed? Hemp milk--which I suddenly am seeing in more stores--has a slight beany flavor usually, but I think chocolate would cover it up. But it might be made from hemp seeds? I'm not sure how that works. Hemp milk is delicious! I love it, but wish it wasn't quite so expensive. I'm wondering if a potato milk might work as a suitable substitute for nut, rice, and dairy milks. Also, as an alternative to hot cocoa, what about a spicy chai tea that non-dairy chocolate is added to? I think it would be delicious! Regarding chocolate flavoring, some health food stores carry water-based (non alcohol)series of extracts and the chocolate is very good. I use maple syrup instead of cane juice as sweetener. You might like and tolerate that too. I would definitely think the " flavour " is optional! You can try making it with just the cocoa powder, sweetener and water... and see how you like it. Experiment with the quantities and find a balance that pleases you.
