Hello,

As you may have read before, I'm taking my 18 month old son off corn to

see if it clears up his symptoms. If anyone has any suggestions for

menu ideas or snacks, that would be great. I looked in the files for

the baked garbonzo beans, but couldn't find exactly how to do it. I

think that he, as well as my other boys, would like that. I'm feeling

very overwhelmed with this new restriction. I know that some of you

have a lot more, but gluten, dairy and now corn seems really difficult

with our really limited food budget. Any suggestions would be very

appreciated.

I don't know if this helps or not, but the " Eating For Your Blood Type " people

say that Type 0 people cannot eat grains (including corn), dairy, as well as a

list of other foods. You may want to check that book out for yourself and see if

there is anything there that sparks some ideas.

It is difficult, but what a blessing your son has in you, to care

about his health so much. If he truly is sensitive to corn, it will

be so worth the inconvenience. It will eliminate most processed

convenience foods from your diet, but even that is a blessing,

because it leaves you with the most nutritious foods, and a good

reason to eat them. Figure out which fruits and veggies they love,

and provide them, served in attractive ways to eat. Most fruits and

veggies are much less expensive per pound then corn chips, Doritos,

etc. So your budget may benefit too.

Here is a recipe from the Vegan Lunchbox. Great cook book and website.

Everything that follows is from the cookbook.

Cheezy Roasted Chickpeas

 

These chickpeas fill the house with an amazing, tantalizing smell like hot

buttered popcorn as they roast. In fact, I like to make them on family movie

nights and serve them in place of regular pepcorn. They are chewy on the

outside and soft on the inside.

 

Makes about 1 1/2 cups

 

1 15 oz. can chickpeas ( also called garbanzo beans), rinsed and drained.

1 Tablespoon canola oil

1 1/2 teaspoon nutritional yeast flakes

1/2 teaspoon kosher salt, or to taste.

 

Preheat oven to 400F. Line a baking sheet with parchment. Toss the chickpeas

in a medium bowl with oil, yeast, and salt. Spread in a single layer on the

baking sheet.

Roast for 30 minutes, stirring occasionally, until golden and slightly crispy.

Once cooled, store in an airtight container.

 

Variation: Fast Cheezy Chickpeas

 

When you just can't wait: open a can of chickpeas, rinse and drian, pat dry,

then sprinkle with the nutritional yeast and salt. Voila!

I am not a fan of nutritional yeast, but I do like to roast chickpeas with a

little paprika or garlic seasoning using the same method. They are a tasty

snack that way.
