Chickpea, Spinach and Mushroom Soup

Chickpea, Spinach and Mushroom Soup

 

 

4 teaspoons olive oil

1 small red Spanish onion, chopped

300 g (10 1/2 oz) baby mushrooms, sliced

425 g (15 oz) canned tomatoes

425 g (15 oz) can tomato puree

620 g (22 oz) canned chickpeas, rinsed, drained

4 cups vegetable stock

4 teaspoons chopped fresh parsley

1 teaspoon seasoned pepper

1 bunch (about 40 leaves) English spinach, shredded

 

 

1. Heat oil in pan, add onion and mushrooms, cook, stirring, until

onion is soft.

 

2. Add undrained crushed tomatoes, puree, chickpeas, stock, parsley

and pepper, simmer, uncovered, 20 minutes.

 

3. Add spinach, stir until heated through.

 

 

Serves 4 to 6.

Kim, after seeing dozens of recipes from you on the mailing list, I

can't help but wonder:

Are you sending recipes that you've personally tested and enjoyed, or

are you forwarding these recipes on from other sources?

Hi Mark,

 

Most of the recipes come from other sources such as magazines. I wish

I had the time to cook that many. Quite a few of them are on my list

to try though ;)

I figured it was unlikely that you had tried them all :) .

 

I don't know if others feel the same way, but I would love it if you

could specifically flag or point out the recipes that you've

personally enjoyed. (Maybe put [Recommended] in the header?)

 

It's fun looking through all the recipes you post, but I'm far more

likely to give a recipe a try if I know someone else has had success

with it.

I will keep your suggestion in mind, although it can be tricky with

everyones personal tastes.

 

Many of the recipes that I have tried will have a comment under the

recipe in the " Files " . I like to note if it was really good or not, or

what changes I made to the recipe (I very rarely make a recipes as

is). I find that I often refer to my own comments to remember what I did.

 

If anyone else makes a recipe from the " Files " or posted here I would

love to add your comments too. It can really help when searching the

" Files " , as I often do, for something to cook.

I made a variation of this tonight ( I used the left over onion, celery, spices

(sage, parslay, thyme, etc)stuffing mix as a base). Otherwise the rest is the

same. I put it all in the crockpot. i will let you all know how it tastes after

we eat it :o)
