I use Bill's Best Chick'nish for broths, as well as Bill's Best " Beaf " .

McKay's might have MSG. I thought it did a while back, so I avoided it. Here's

the recipe for Chicken Style Seasoning, as found on pg. 19 of Marcella Lynch's

" The Joy of Natural Cooking " . The one in the Newstart book leaves off the

brown sugar and salt (as I do), but is otherwise very close. HTH! Marilyn

 

Chicken Style Seasoning

 

4 t. celery salt

1 t. turmeric

4 t. onion powder

1/2 t. garlic powder

1/4 t. marjoram

4 t. ground parsley flakes

pinch savory

1/4 c.salt

1t. brown sugar

 

One teaspoon of this can be substituted for one packet of G. Washington

Golden Seasoning. Marilyn

HI Pam,

 

I believe there are several different recipes in our files for

" chicken-style seasoning " . It's a savory seasoning blend that is a blend of

herbs that go well in most dishes. It's inexpensive to make yourself,

although maybe it's more convenient to buy the ready-made versions. Brands

for two of them are:

 

Bill's Best Chicknish'

McKay's Chicken-Style Seasoning (check for the whey free version; the other

isn't vegan)

 

Both these brands can be purchased in containers or in bulk at most health

food stores. It's a staple in my kitchen --- filling in the gaps of flavor

in many foods.

Ah, okay. I'm only down to condiments so far! I'll watch for those

at the HFS tomorrow too, the big one seems to be getting some more of

the US brands lately.

Yes, some versions of McKay's do have MSG. They do make a vegan, MSG

free version but it's still quite salty. I've mostly switched over to

Bill's Best Chicknish' as well, although it took me awhile to get used

to the lower sodium levels.

 

If you make your own version of chicken-style seasoning and don't want

to use sugar, you might try the sweet herb, stevia. It works quite

well.

" Chicken-style seasoning " may also be called to as " Chicken-style

Bouillon Powder " or, as in Australia, " Chicken Style Stock Powder "

(Massel being the best known vegan and gluten free brand).

 

I'll often make a recipe from the files, although I do cut back on the

salt a bit as the recipe is way too salty for my tastes:

 

 

Chick-it Seasoning

From " The Guilt-free Gourmet "

 

 

1/4 cup salt

1/2 cup nutritional (savoury) yeast flakes

1/4 to 1/2 tsp turmeric

1/2 to 1 tsp garlic powder

1 Tbsp (3 tsp) onion powder

1/2 tsp marjoram

1/2 tsp sage -OR- summer savoury

1 Tbsp (3 tsp) parsley

 

 

1. Blend thoroughly to a powder-like consistency.

 

2. Store in a sealed container in the refrigerator.

 

 

This is an excitotoxin-free seasoning. It is great in any of your

recipes that call for chicken-like seasoning or chicken broth. You can

use it to season soups, sauces, gravies, burgers, loaves or other

savoury dishes. Keeps very well in the freezer, so make up a double

recipe!
