We just finished dinner...thought I'd share our menu as it was very

well liked by the kids (all 6 of them).

 

I made stuffed shells with the spinach ricotta-style filling (in the

files). Then we had steamed broccoli, boiled baby carrots and brussels

sprouts. For our " challah " , we used a Bob's Red Mill mix made with

flax seed instead of eggs.

I've added your delicious menu idea to the " Vegan & GF Menu Ideas " file.

 

Isn't it great when you find something that everyone will eat ?

Doesn't happen in my house. I have one son (21) that won't touch

anything that is vegan or gluten-free. He even complains about some of

my veggies tasting like restaurant dishes ... I take that as a

compliment, lol.

 

Anyone else have any menu's that they would like to share ? It would

be great to fill up the file a little more.

Some (dinner) meals ideas from this week's plan:

 

- roasted veggies, soy chicken (gf), sweet potato, gravy, gf biscuits

- taco salad (bean chili, salad veggies, tofutti sour cream, salsa,

corn chips or terra chips)

- stir fry with rice/millet/quinoa

- veggie burger (gf) and fries, raw veggies

- mac and cheese (gfcf) and orange pistachio rice salad

- personal pizzas (gf crust, veggies, no cheese)

- veggie lasagna (gfcf), salad, banana bread

It's not a big name brand, I just get it at our local Asian market on

the same shelf as the tofu. Ingredients are just soy, oil, and

pepper, I believe.
