Guest guest Posted February 6, 2008 Report Share Posted February 6, 2008 Spicy Roasted Zucchini 4 zucchini, thickly sliced 4 teaspoons olive oil 2 garlic cloves, crushed 1 teaspoon ground cumin 1 teaspoon ground coriander plain soy yogurt, to serve coriander (cilantro) leaves 1. Preheat oven to 200 C (400 F) or 180 C (350 F) fan-forced. 2. In a roasting pan, combine zucchini, olive oil, garlic, cumin and coriander. Season to taste. 3. Roast for 10 to 15 minutes, tossing halfway through cooking, until tender and starting to colour. 4. Remove and stir through coriander (cilantro) leaves. Serve with soy yogurt. Serves 4.
