Cajun-Style Mashed Potato

 

 

4 medium (800 g)(1 3/4 lb) old potatoes

40 g (1 1/2 oz) vegan margarine

1/4 cup milk alternative

1 teaspoon sugar

1 small red capsicum (bell pepper), roasted, sliced

1/2 teaspoon Cajun spice mix

1 teaspoon chopped fresh thyme

 

 

1. Peel potatoes and cut each into 4 even pieces. Boil, steam or

microwave potatoes until tender; drain, mash well with potato masher

or fork, or push potato through a sieve.

 

2. Add margarine, milk and sugar, beat until margarine is melted.

 

3. Add capsicum (bell pepper), spice mix and thyme to mashed potato;

mix well.

 

 

Serves 4.
