substitution?

This may sound a bit strange, but is there a pepper-less substitution

for chili powder that would work in vegan chili?

 

The recipe:

Saute onions/garlic

Add

1 lb. tofu

2 T. Chili Powder

2 tsp. Cumin

When they are all mixed add:

1 can pinto beans

2 cans kidney beans

3 cups water- I add a bit more

Heat until done.

 

Pretty simple recipe, but because of the chili powder, I can't eat it.

 

I don't have the room to make chili for my husband and then have to

make something else for me because I can't have the pepper in the

chili powder.

I've been musing about the same thing. You need something for heat.

Black pepper (which is not a nightshade) comes to mind. I wonder

about horseradish. What other " hot " veggies/spices are there, that

are not peppers? Can't use hot sauce, chili powder, or cayenne.

 

Some onions are quite hot.

I don't use chili powder either because many of the commerically prepared

mixtures are NOT gluten free. I put in just the individual spices I want.

 

Chili powders are mixtures of ground chillis with additions such as paprika,

cumin, oregano, garlic powder, salt, black pepper, cinnamon, cloves, coriander,

mace, nutmeg and/or tumeric. Some brands also contain wheat starch or modified

corn starch.

 

I definitely think you can make a mutually enjoyable chilli without black

pepper!

 

If you are concerned about the spiciness, you can (carefully!) add more ground

chilles, cayenne or even ginger. Dried parsley has a peppery flavour when used

generously and is good nutritionally too.

loss as to exactly what to add instead of the chili powder.

It wouldn't be the SAME as chili powder, but if I were trying to work around

using chili powder in that recipe, I would use smoked paprika, garlic, and a

bit of molasses, probably. And onions or green onions.

Well, a little experimentation may be necessary to find out how you want it. In

my chilli recipe, in addition to the beans, I chop in carrots, cabbage, celery,

leeks although I do not put in tofu.

 

Here's the combination I normally use in a large pot of chilli of mixed beans

and veggies: 1 tbsp dried parsley, 1 tbsp cumin, 1 tbsp basil, 1 tbsp oregano,

several cloves of fresh garlic chopped up finely. This combination makes a

yummy, completely mild chilli.

 

In addition to those herbs/spices, if you want to make it hot/spicey, try adding

1/8 to 1/4 tsp ground chillis or pure cayenne. Mix that in well, let it simmer

for a few minutes then taste. If it isn't spicey enough to suit you, add

another 1/8 or 1/4 tsp, mix that in, let it simmer and taste it. The amount to

add will depend on what type of ground chillis you happen to have, so just add a

little at a time like that to avoid putting in too much.

Yes, paprika is made from dried red peppers. That is NOT the same thing as

'pepper' though. Too bad it's the same word.

 

Black pepper is the ground up pepper corns.

meant ground pepper corns. Is that right? Are you OK with sweet and hot

peppers? ... from the Deadly Nightshade family.

 

Oh, and by the way, I also put canned tomato in my chilli.

Ah! Well, that does put a different light on the discussion! It's good to be

very clear that 'pepper' and 'peppers' are two completely different plants.

 

I have a recipe for non-deadly nightshade chilli that can also be used as

spaghetti sauce just by leaving out the beans. I got it from the book " Eat

more, weigh less " by Dr. Terry Shintani of Hawaii. I just checked and it's

still available on amazon. It uses grated beets instead of tomatoes. It gives

the sauce or chilli the red colour and enriches the flavour, while being low in

allergenicity.

 

Now that it's clear you have to avoid 'peppers' rather than 'pepper', clearly,

you cannot use paprika, ground chillis or cayenne. However the mild herbs and

spices are non-nightshade.
