Family Apple Crumble and Custard Sauce

Family Apple Crumble

 

 

6 granny smith apples

1/2 cup (120 ml) water

1/4 cup sugar

1 1/2 teaspoons cinnamon

 

Topping:

 

1 1/2 cups GF self-raising flour (I use Orgran)

-OR- 1 1/2 cups GF flour mix + 3 tsp GF baking powder

1/2 cup flaked almonds

1/2 cup brown sugar

1/2 cup vegan margarine

 

 

1. Preheat oven to 190 C (375 F).

 

2. Peel, core and slice apples and place in a pie dish with sugar,

cinnamon and water.

 

3. Place flour, almonds and brown sugar in a bowl. Rub the margarine

into the mixture until the mixture is crumbly.

 

4. Sprinkle crumble over apples.

 

5. Bake for around 30 minutes until golden on top.

 

6. Serve with 'Custard Sauce' (see below) or vegan ice cream.

Custard Sauce

 

 

3 cups soy milk

5 1/3 tbsp (4 tablespoons Aust.) cornflour (cornstarch)

8 tsp sugar (-OR- to taste)

2 teaspoons GF vanilla essence (extract)

 

 

1. Blend cornflour to a paste with a little soy milk in a small bowl

 

2. Heat the rest of the soy milk in a saucepan until hot.

 

3. Pour the hot milk over the cornflour and stir with a wooden spoon.

 

4. Return the mixture to the saucepan. Stir over heat until boiling.

Cook for 30 seconds.

 

5. Stir in sugar and vanilla essence.

 

 

Serves 6.

For the topping, what can be used in place of nuts? I do not seem to do well

with nuts.

Hi Danielle,

 

You can use coconut to replace the almonds.

 

This recipe is an adaptation of recipe my son was cooking in school a

few years back. The original recipe used coconut, but my son was

getting stomach pains from coconut at the time, plus I had trouble

finding any organic, so I replaced it with the almond flakes and

actually preferred it that way.
