Light & Tasty GF/DF Waffles 1/2 c. water 1 1/2 c. soy or other dairy free alternative " milk " beverage 2 T. olive oil 1/2 tsp. vanilla powder 3/4 tsp. sea salt 1 c. brown rice flour 2-3 T. soy flour 2-3 T. Bob's Red Mill GF pancake mix 1 c. GF oats 1 tsp. Rumford Baking Powder Blend all ingredients for several minutes, then let sit for about 5 minutes. You can add a little more liquid if needed to make a pourable but still fairly thick mix. Bake in a very hot Pam sprayed waffle iron for 8-9 minutes. Ideas for toppings: soy margarine with pure maple syrup or agave nectar; almond or peanut butter with applesauce; berry sauce and banana slices; etc. Enjoy! from Kim in Colton, OR Quote Link to comment Share on other sites More sharing options...

It's a whitish powder made from extractives of the vanilla bean & tastes very yummy, but has no alcohol in it. It usually has some negligible amount of sugar, whether sucrose or cane sugar (okay for diabetics). My husband and I love it in our Triple Carob Smoothie. We use the same proportions as with liquid vanilla. I talked with Laurel, of www.glutenfreemixes.com and she gets hers in bulk; then I contacted her source in CA & they only sell to wholesalers. The gal there told me exactly what is in theirs: vanilla bean extractives, evaporated cane juice, silica, and cellulose. Some are made from sucrose that has been ribbon-sprayed with vanilla extract, and some are a dextrose-vanilla extract mix. You can also mix them into powdered or granulated sugar for a vanilla-flavored sugar and you can sprinkle the powders on finished foods such as cinnamon/vanilla toast or...on top of the family heirloom cake when it's warm from the oven. Be aware that many of the vanilla powders from Europe are actually synthetic. Check the ingredients list to see if it's natural or not. " I have found vanilla powder at Fred Meyers, and Limbos; you might try at your local health food store as well. It's a little spendy, especially if you buy in the little spice jars, but here's a link to where you can get it bulk.
