I have Vance's Dari Free....would that be okay to use? I don't see why not. Also, does this come out truly like whipped cream? I have tried so many recipes that my family hasn't liked. Guest guest Posted October 23, 2002 Report Share Posted October 23, 2002 Tracy, I've never used Vance's Dari Free, but if it comes in powdered form I don't see why it wouldn't work. I think the description is closer to a " light and fluffy topping " rather than " whipped cream " . It is thick (like mayonnaise or pudding) and creamy. Guest guest Posted October 24, 2002 Report Share Posted October 24, 2002 Tracy If you use the Vance's be sure to test for sweetness before adding the honey or whatever. Vance's is already sweetened with corn syrup and I find it too sweet for regular cooking but it might be fine in something like Whipped Cream. The Vance's also doesn't have the fats that soy milk does. Potatoes are just not naturally fatty - lol! It may not whip up the same (ie be thinner) because of the Vances. You could try dry coconut milk powder because it will be fattier than Vances and you can usually get it in little envelopes rather than tins so you won't waste too much to try the recipe. As for the lecithin, that's abit more difficult, as it is used as a thickener (and emulsifier). I wonder if instant Clear Jel might be helpful in this application. What to others think? Guest guest Posted April 6, 2008 Report Share Posted April 6, 2008 " Whipped Cream " Source: Baking with Stevia 1/2 cup raw cashews 1/2 cup soy milk 1/4 tsp. stevia extract (pure white powdered) 1/2 tsp. vanilla extract 2 tsp. honey or maple syrup pinch of salt 1/2 to 3/4 cup oil Grind cashews in a blender with the soy milk until creamy using the pulse button. Periodically clean off the sides of the blender. Add the stevia, vanilla, honey, and salt. Blend until creamy. Slowly add the oil in a steady but fine stream through the center hole of the blender cover. Start with 1/2 cup oil. For a thicker cream add more oil. You should not have to add more than 3/4 cup oil. (Note: I find that this will thicken as it cools. . .usually you can get by with the 1/2 cup). A whipped cream can be made using 1/2 cup cashew nuts and 1/2 cup water plus the oil OR simply by using 1/2 cup soy milk plus the oil, but I have found that a thicker cream can be made by combining the cashew nuts with the soy milk.
