I have used Brazil Nuts with good success. . .and sometimes Hazel Nuts. I've also used sunflower seeds and they work great. Walnuts and almonds don't get as creamy, instead they are abit gritty when ground. Once I even tried cooked rice. . . .hmmmmm. . . .we won't go into that. Let's just say it I didn't have to throw it away and the family ate it. . .but I probably won't try that again. Cashews are soft and have a nice amount of fat in them. . .so they grind up to be very creamy. I'd start with the Brazil Nuts and think they'd work just fine. Vegan Recipe Cashew Cream Ingredients: a.. 200g cashews b.. 800ml apple juice c.. 2tbs sunflower oil d.. sugar to taste e.. vanilla essence to taste Method: Bring the cashews and apple juice to the boil, then reduce heat and simmer until the cashews soften (five to ten minutes). Cover, and leave to cool for a couple of hours, or overnight. Remove the softened cashews with a slotted spoon, and liquidize with the oil, and as little of the apple juice as possible, adding sugar and vanilla essence to taste. The cream is delicious with fresh fruit salad, and as an ingredient in a wide variety of desserts. There were a wealth of different recipes using apple juice or maple syrup, or dates and I wondered if anyone had a particular favourite. I was planning to make rhubarb crumble tomorrow and thought I'd rather try a vegan alternative to double cream to go with it. Guest guest Posted April 6, 2008 Report Share Posted April 6, 2008 Cashew Cream Source: Baking with Stevia 1/2 cup raw cashews 1 cup water 1 tbls. oil 1/4 tsp. stevia extract 1 tsp. maple syrup or honey Grind the cashews in part of the water. Add the rest of the water, the oil, stevia, and maple syrup. Blend until smooth and creamy. Add a little more water if a thinner cream is desired.
