Guest guest Posted April 6, 2008 Report Share Posted April 6, 2008 SOYBEAN WAFFLES Source: Vegetarian for Life Cookbook 1/2 cup soybeans Water to cover soybeans 2 1/2 cup water 1 1/2 cup quick cooking oats (gluten free if necessary) 1 Tbsp. oil 1/2 tsp. sea salt 1 tsp. Sucanat or other sweetener Place soybeans in a bowl. Pour water into bowl until approximately 1-inch above soybeans. Allow soybeans to soak over night. Drain remaining water off soybeans in the morning. Place all ingredients in a blender and blend until very smooth. Bake waffles in a preheated waffle iron for approximately 8 minutes or until golden brown. *These waffles are amazingly light and fluffy.
