Guest guest Posted April 6, 2008 Report Share Posted April 6, 2008 My Fav Golden Macaroons 1 c. grated raw carrots, packed 1/2 c. water 1/2 c. honey, or alternative vegan sweetener 1 tsp vanilla 1 1/2 c. coconut 1 c. oat flour (gf) 1/2 tsp salt 1/2 tsp. baking powder (optional) 1/2 tsp. stevia powder (optional) Make oat flour by blending quick or rolled oats. Mix well all ingredients. Let sit 10 minutes. Firmly pack dough into a tablespoon then drop on an oiled cookie sheet. Bake at 350 degrees for 25 minutes. Most baking powder is also not corn-free, and corn is not allowed for passover.
