Guest guest Posted April 18, 2005 Report Share Posted April 18, 2005 Marilyn, When I make these type of bars I cheat. I take my whole dates and take the pits out of them. Then I soak them in boiling water (just to cover). After they are soft I blend it up in the blender. Very quick and still tastes great! I bought tins of pineapple last year and then couldn't recall what I had intended to make with them. They are about to go out of date, so your post was very timely! Guest guest Posted April 13, 2008 Report Share Posted April 13, 2008 Pineapple Date Bars Source: Five Loaves Cookbook - adapted 1 1/2 cups flour of choice 1/2 cup Brazil nut butter 3/4 tsp. salt 2 cups oats (gf) 1/2 cup unsweetened, flaked coconut 1/2 cup water and 1/2 cup honey, mixed together 1 cup pineapple chunks and juice or crushed pineapple 1 cup date pieces 1 tsp. vanilla 1 cup raisins 1 cup diced dried pineapple Place flour and salt in a mixing bowl and add the Brazil nut butter. Work evenly together with your hands, then stir in salt, oats, and coconut. Then add honey and water mixture to the dry mix and stir together. Hint: The mix should be moist with all the dry mix evenly coated, but not too wet and gummy. Place half the mixture on the bottom of a 9 x 13 inch pan that has been oiled or sprayed; press with fingers like pie crust. Bake 10 minutes at 350 degrees. Meanwhile, blend dates and canned pineapple. Spread over baked crust. Sprinkle evenly with raisins and dried pineapple. Sprinkle remaining crust mixture evenly over the top. Press gently into pineapple-date filling with fingers. Bake 20 - 30 minutes at 350 degrees until lightly browned. Remove and cook before cutting in squares. Note: A single recipe fits a 9 x 13 inch pan. If you are making cookies for a crowd, a double recipe fits on a cookie sheet and makes 24 - 30 bars.
