Guest guest Posted April 14, 2008 Report Share Posted April 14, 2008 Polenta Corn Bread 3 c. polenta 2 c. boiling water 1/4 c. honey 3 T. oil 1 c. milk alternative of choice 1 egg substitute 2 t. baking powder 1/4 c. minced red pepper 1/4 c. minced green pepper 1 T. Jalapeno chilies In a large bowl combine cornmeal, water honey, oil and salt. Stir well, then let stand at room temp 40 min. Lightly oil 9x13 dish. Set in oven at 400 for five min. while finishing batter. Add milk and egg substitute to soaked cornmeal mixture. Beat lightly. Add baking powder and stir well.
