Do you think any thing could replace the oil in this recipe? Or could it be

omitted?

I think this oil is being used as an emulsifier to make the product more creamy.

Are you avoiding all oils or would you sub something like like coconut butter?

 

Since it is so little, you could try leaving it out, but there is the chance

that you will not have as creamy a product AND that you will get ice crystals

forming the rice milk component of the product.

 

There is also alot of sweetener in here for the quantity of other ingredients.

I think I would lessen that as well, especially if you are using fresh fruit or

melon as a flavouring.

The oil only adds richness to the flavour and smoothness to

the texture, so I think it could simply be left out easily.

Also, I think some pureed banana instead of the oil would add a

nice flavour AND smoothness of texture.

Yah, I was thinking the rice milk AND sugar could be replaced by

maple syrup. That provides the liquid content and sweetness in a

form that is already smooth and won't crystalize like rice milk

would.

What does the blanching do to the tofu?

Tofu Ice Cream

Source: Recipes of Friendship Cookbook

 

1 1/3 lb. tofu rinse and drain*

1/2 cup honey

1/2 tsp. maple flavoring

2 tsp. vanilla

1 tsp. slippery elm powder

1 cup raspberries or other fruit

 

Blend all the above together until very smooth. Freeze solid.

Put through a Champion Juicer or food processor. Freeze a second

time. Remove from freezer a few minutes before serving to

softgen.

 

Note: Blanch the tofu in boiling water for 2 minutes then rinse

in cold water.

8 ounces soft tofu

2 teaspoons vanilla extract

2 Tablespoons vegetable oil

6 Tablespoons sugar (or alternative sweetener)

3/4 cup rice milk

 

Mix all ingredients in a blender until smooth. Pour mixture into a low

container and place in the freezer. Stir frequently during the freezing

process (to prevent crystallization). When ready to serve, transfer the

frozen dessert mixture to the refrigerator for about 10 - 15 minutes. Serve

and enjoy!

 

You can add 1/2 cup cocoa powder or carob powder. An equivalent amount of

fresh fruit or nuts is good too.
