Are you avoiding all oils or would you sub something like like coconut butter? Since it is so little, you could try leaving it out, but there is the chance that you will not have as creamy a product AND that you will get ice crystals forming the rice milk component of the product. There is also alot of sweetener in here for the quantity of other ingredients. I think I would lessen that as well, especially if you are using fresh fruit or melon as a flavouring. Or could it be omitted? >Hawkeye The oil only adds richness to the flavour and smoothness to the texture, so I think it could simply be left out easily. Deborah Tofu Ice Cream Source: Recipes of Friendship Cookbook 1 1/3 lb. tofu rinse and drain* 1/2 cup honey 1/2 tsp. maple flavoring 2 tsp. vanilla 1 tsp. slippery elm powder 1 cup raspberries or other fruit Blend all the above together until very smooth. Freeze solid. Put through a Champion Juicer or food processor. Freeze a second time. Remove from freezer a few minutes before serving to softgen. Pour mixture into a low container and place in the freezer. Stir frequently during the freezing process (to prevent crystallization). When ready to serve, transfer the frozen dessert mixture to the refrigerator for about 10 - 15 minutes. Serve and enjoy! You can add 1/2 cup cocoa powder or carob powder.
