Guest guest Posted May 6, 2008 Report Share Posted May 6, 2008 Caramelised Spiced Carrots 750 g (26 1/2 oz) carrots, peeled 1 red onion, halved, thinly sliced lengthways 1/4 cup olive oil 1/4 cup + 2 tsp sugar pinch of chilli powder pinch of ground nutmeg 1. Preheat oven to 180 C (350 F). 2. Line 2 large, 2 cm (3/4 " ) deep oven trays with foil. 3. Using a processor or mandolin, finely shred carrots. Place in a bowl. 4. Add onion, oil, sugar, chilli and nutmeg. Season with salt and pepper. Mix until well combined. 5. Divide carrot mixture between prepared trays. 6. Roast for 1 hour, swapping trays over in the oven after 30 minutes, or until crisp and golden. 7. Allow to cool slightly. Using tongs, tear carrot mixture into pieces. Serve. Serves 8. Have you taken time to look in the photos section of our group to see the pictures she's shared for some of her dishes? I know you can trust her judgment when it comes to recipe sharing. Also, when list members try out a recipe shared and comment back to the group, Kim adds a 'note' to the recipe in our files, telling about successes and failures. Of course some of us are better or worse cooks than others, and what turns out for one might not turn out for another, but all in all, any little bit of information helps. Today's recipes all come from reputable Australian magazines. I post them all to offer choice to a wide range of tastes. Some recipes (like the Caramelised Spiced Carrots) I will eventually try, some I won't as they have ingredients which don't appeal to my personal tastes, but I know others will enjoy them. All these recipes are also added to the " Files " ( ) which form a huge recipe collection in which you'll find something for everyone. Just like in every recipe book, there are probably some not-so-good recipes, but there are many, many great ones.
