Guest guest Posted May 10, 2008 Report Share Posted May 10, 2008 Indian Beetroot Dip 2 beetroot 2 teaspoons olive oil 1 small brown (yellow) onion, finely chopped 1 garlic clove, crushed 1 teaspoon ground coriander 1/2 teaspoon ground cumin pinch chilli powder 6 teaspoons flaked coconut 1/2 cup plain soy yoghurt 4 teaspoons chopped fresh mint leaves 2 teaspoons chopped fresh coriander (cilantro) leaves 1. Trim beetroot stems and leaves. Wearing gloves, peel and grate beetroot. 2. Heat oil in a frying pan over medium heat. Add onion and garlic. Cook for 3 to 4 minutes or until tender. 3. Add ground coriander, cumin and chilli. Cook, stirring, for 1 minute or until fragrant. 4. Add beetroot, coconut and 1/2 cup cold water. Reduce heat to medium-low. Simmer, uncovered, stirring, for 10 minutes or until beetroot is just tender. Transfer to a bowl. Cool for 15 minutes. 5. Add yoghurt, mint and coriander (cilantro) leaves. Stir to combine. Serve. Beets, beetroot, and beet leaves are a food I'm new to and supposed to eat for my health issues. I guess most people don't eat them if they are not in a jar! LOL I would appreciate any and all recipes with fresh beets/beetroot/beat leaves. I've just discovered Borscht too, and I would love a recipe for this wonderful beet drink.
