I've never cooked eggplants before; I know I've had them in a few natural-cafe type places, but never by themselves. Any simply wonderful recipes you would suggest for a non-eggplant eater? Guest guest Posted May 17, 2008 Report Share Posted May 17, 2008 My favorite way is to slice them (into discs or long flat pieces), dry fry on one side with onions and peppers, flip, drizzle balsamic vinegar over the contents of the entire pan, turn off heat and let caramelize a little. Guest guest Posted May 18, 2008 Report Share Posted May 18, 2008 My favorite way to prepare baby eggplants is to peel the skins off and then soak them briefly in salt water (to remove bitterness). Then rinse in clear water and pat dry with a paper towel. Heat a skillet so it's quite hot (do not add oil; although you could wipe it lightly with EVOO on a paper towel if you want). Place the eggplants on the hot skillet and sprinkle with a little sea salt and liberally with sweet basil flakes. Once browned, turn and do the other side. Delicious plain or with (gulp) catsup!
