I've had Waldorf Salad and feel the way you do about it -

but I never like mayo, just don't like it.

 

The Waldorf Salad would be good with a yogurt-based

dressing, IMHO.

Waldorf Salad

 

 

The Waldorf salad was created by Oscar Tschirky, at New York's

Waldorf-Astoria Hotel in the 1890s. The original salad contained only

diced red-skinned apples, celery and mayonnaise. Chopped walnuts were

added later and are now an integral part of this American classic salad.

 

 

3 red apples, cored, thinly sliced

1 lemon, juiced

4 small stalks celery, thinly sliced

1 cup walnuts, toasted, roughly chopped

1/3 cup vegan mayonnaise

2 tablespoons (8 tsp) vegan sour cream

18 crisp cos (romaine) lettuce leaves, rinsed, dried

 

 

1. Combine apples and 2 tablespoons (8 tsp) lemon juice in a large

bowl. Lightly toss to coat. Add celery and half the walnuts.

 

2. Combine mayonnaise and sour cream in a jug. Season with salt and

pepper. Pour dressing over apple mixture and toss to combine.

 

3. Arrange 3 cos leaves on each serving plate. Spoon salad onto

lettuce and sprinkle with remaining walnuts. Serve.

 

 

Serves 6 as a side.
