I've not yet found a tofu scramble I liked. They've all been gross. And I've even used the Fantastic Foods tofu scramble mix (and I love all the other mixes Fantastic puts out.) That's a disputed issue. There was one study that came up with goiters in people eating soy but no one else has been able to replicate the results since then. I'd say if you feel soy is making your condition worse, cut it out of your diet (try eliminating it for a while to see if you feel a difference.) I don't add soy sauce but make mine a little cheesy by adding Nutritional yeast to it, also veggies cheese slices. I have heard that soy is not good to eat if you have thyroid issues but I don't know that for positive. When I have a question like that I usually look up information on line. Web MD is good also just google the question and see what pops up. I have also found alot of information at vegsource.com. Good luck on finding the answer to your question, maybe someone more knowledgeable than myself would have the answer for you. Guest guest Posted January 23, 2008 Report Share Posted January 23, 2008 Thank you both..:-) and I did go to WEB M.D. and all I could find was that a group thought that it could cause issues, also it was saying they decided it causes cancer and other health issues, and that it was the opinion of the group. I will look more into it though, I do use tofu for stuffed shells and like soy milk. I will try the celery though I just may be one of those who just don't have a taste for it. Also make sure you use firm tofu and just squeeze it in your hands it resembles scrambled eggs better I think. I love to use salt free Spike it is a great seasoner. I have hypothyroidism and I am cautious about soy. I do use it but not as much anymore. I love 8th continent milk and Silk but I am careful. Just keep experimenting with the scrambles though-personally I would treat it just like an omelet higher heat, and sauté it don't simmer it. Guest guest Posted January 23, 2008 Report Share Posted January 23, 2008 Try olive oil instead. I use odd cut bell peppers and onions. Sometimes fresh mushrooms. Salt and white pepper powder. Some cornstarch or baking powder. Maybe a few appropriate filched leftovers. They always don't work when they are sloppy wet. I don't know why the recipes with tofu forever suggest Asian ingredients. I myself would not want soy sauce in mine at all. I think of tofu as the egg and use normal omelet ingredients. Almost forgot. Tomatoes work great too. And, I think Silken is watery and soft anyway. Usually I have Hinoichi brand tofu or something from Whole Foods. Different brands of tofu's have different flavors. Albeit, slight differences. Also most have textural differences. Usually I use a heated spinach, chile or wheat wraps for this affair. Try again and cook it all together so the veggies don't wilt unless you want them that way. Also keep the lid off so the moisture evaporates. Don't stir the contents. Just flip it over like a pancake after it has set and cooked a couple of minutes. Altogether it should take a little more ten minutes to make from fridge to plate. In fast mode I have done it in around five and it was one of the best I ever ate. I was using a different type of tofu than I normally do (as it was in a smaller packet) and even though it was called firm tofu it kept falling off the sticks. So I'm looking at the capsicum, onion, mushrooms and the no longer neatly cubed tofu that had been marinated and I just thought 'chuck it all in a pan and make some kind of tofu stir fry with it.' So that's what I did, thinking all the while that it certainly wasn't the most attractive dish in the world. Now I find there is actually a recipe for this gunk (that surprised me when it tasted nice). I didn't use oil though. INGREDIENTS 2–3 Tbsp. extra-virgin olive oil 1 sweet onion, cut into chunks 5 garlic cloves, minced 2 Tbsp. nutritional yeast 1/2 tsp. ground ginger 1/2 tsp. chili powder 1/2 yellow or green bell pepper, seeded and chopped 1 cup sliced mushrooms 4 tomatoes, chopped 1 pound firm tofu, drained well and cut into bite-size pieces Tamari to taste Freshly ground pepper to taste Fresh snipped chives to taste Heat the olive oil over medium heat in a large skillet and sauté the onion for 5 minutes, until softened. Add the garlic, nutritional yeast and spices, stir and cook for 1 minute. Add the pepper and mushrooms, stir-frying until tender and crisp. Add the tomatoes and slices of tofu.
