Guest guest Posted May 21, 2008 Report Share Posted May 21, 2008 Carrot, Orange and Sultana Salad Source: readysteadycook.ten.com.au 2 carrots, peeled and coarsely grated 1 orange, peeled and segmented 1/2 avocado, diced 4 tsp flat leaf parsley leaves 1/4 cup sultanas(raisins) 1 orange, halved olive oil 8 tsp pistachios 1. Combine the carrot, orange segments, avocado, flat leaf parsley and sultanas (raisins) in a small bowl. 2. Squeeze over some of the orange juice and drizzle with olive oil, season with salt and pepper. Toss gently to combine. 3. Spoon the salad into a bowl and sprinkle with pistachios to serve.
