new GF brownie recipe with a healthy twist

Hey everybody,

 

I've been experimenting in my gluten-free kitchen lately, trying to come up

with sneaky new ways of making regular baked goods healthier. Di made

brownies tonight from a mix and they smelled wonderful. My mouth watering as

I stood in front of the microwave, waiting for my bowl of chopped spinach to

warm up for dinner, I got an idea. I tossed the spinach in the blender with

some bananas, a little water, vanilla, and some coconut oil. When that was

good and blended, I stirred it into some sugar, GF flour, baking powder,

flax (since I can't eat eggs), cocoa powder, and a little salt. I poured the

batter into a greased pan and baked for 30 minutes, and the result was a

chewy, moist brownie that is vegan, low in fat, moderate in sugar, and

happens to contain fruits, veggies, whole grains, nuts, and seeds.

 

Having not eaten a brownie in probably two years or so, I was quite excited.

I've attached the recipe in case anyone else wants to try it out.

Secret Recipe Brownies (Robin's concoction)

 

Place in blender:

 

3 bananas, ripe (or use 2 eggs, omitting flax and increasing sugar to 1 cup)

 

2 cups frozen spinach, thawed (in microwave is fine)

 

¼ cup water

 

1 teaspoon vanilla

 

2 tablespoons oil

 

 

 

Combine in mixing bowl:

 

¼ cup flax seed meal

 

¾ cup cane juice crystals (or sugar; make it a full cup if you like them

sweet)

 

1 cup GF flour mix (I used a mixture of rice flour, potato starch, and

tapioca flour, but I bet that sorghum or teff would work well on their own,

too)

 

¾ cup cocoa powder

 

2 teaspoons baking powder

 

½ teaspoon salt

 

Chopped nuts, optional (however much you like, maybe 1/2 cup or so)

 

 

 

Blend liquid ingredients with bananas and spinach in the blender. In a

mixing bowl, combine dry ingredients. Pour in liquid mixture and stir until

combined. Pour into a greased 8 x 8 pan and bake at 350F for about 30

minutes, or until center is just set. Cool slightly before cutting.

Thank you for a great recipe, Robin! It sounds delicious!!!

 

I'm wondering if you could clarify the amounts of water, cocoa powder,

salt, flax, and cane sugar, as they came through as ? instead of

amounts.

 

Thank you for the vegan recipe! Since we are a vegan group, I

appreciate that this doesn't use eggs.

on some computer programs and get garbled on others. I can see it fine

on mine, but the fractions can become meaningless on others. Here it

do you measure out two cups (packed??) frozen spinach and then thaw?

 

Or do you measure 2 cups after thawing?

My daughter can eat oat flour with out problem. Do you think straight oat

flour would work in this recipe? Also, how can I adapt this to include

blended dates rather than the sugar?

I think oat flour would work for these. Also, If you want to use dates

instead of sugar, I would add the dates to the blender (I have no idea how

many you would need; you'd have to experiment) with the bananas and the

spinach. I used about two cups (packed) of frozen chopped spinach, which I

thawed a little in the microwave to make it blendable. But it's really

flexible; you could add more or less and the recipe would probably work out

just as well.

 

Enjoy, and do let us know how your modifications work out. That's the fun of

this list; we get to share our recipes and play with them and just have fun

with our gluten free, vegan recipes.
