gluten in it's many forms

www.Celiac.com has a ton of information along these lines.

 

Here is their list of gluten-bearing foods and additives:

One that is not on that list is " modified corn starch " . Corn starch itself is

gluten free, but when it is " modified " , wheat starch is mixed with it.

Interesting...I started having those kinds of pains about 10 years ago...and

have been living with them since. Are there other names for gluten for me to

watch out for in ingredients? I want to try this and see if I notice a

difference.

If modified corn starch did contain wheat (in the US) , it MUST be

declared on the label. So, as long as it doesn't say, it's okay.

Huh. As a result of your comments, I did some reading on modified corn starch.

It seems I was misled by the well-meaning person who told me wheat starch was

added! Thanks.

 

Perhaps my mis-advisor was thinking of regular icing sugar which IS thickened

with wheat starch, which is indeed declared on the label.

Most powdered sugar is made using corn starch as it's much cheaper to use

that as a method to keep the sugar crystals from sticking. The company I

work for is the only one in the US which makes a powdered cane sugar which

is both corn and wheat-free. We use potato or tapioca starch.

The last time I looked at regular icing sugar where I live (west coast of

Canada), it had wheat starch in it. I have been able to get gluten free icing

sugar (with corn starch) from Kinnickinik foods.

 

Most powdered sugar is made using corn starch as it's much cheaper to use

that as a method to keep the sugar crystals from sticking. The company I

work for is the only one in the US which makes a powdered cane sugar which

is both corn and wheat-free. We use potato or tapioca starch.

I'm also on the west coast of Canada. Rogers Icing Sugar lists " sugar

and corn starch " . I've never seen any other brand in the grocery

stores, and I haven't had a gluten reaction (I'm *very* sensitive) to it.

The company I work for is America. Sorry to be confusing. I do live in

Canada, but work for a US company.

Icing sugar is easily and cheaply made at home. Just put about 2 cups of sugar

in the blender, with about 1/2 tsp of corn starch and let 'er rip.

 

I haven't bought icing sugar in years.
